Baked Potato Balls

Preheat the Oven:
Set the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Mix the Ingredients:
In a large bowl, combine mashed potatoes, cheddar cheese, chives, bacon, beaten egg, salt, and pepper. Mix well until everything is fully incorporated.

Form the Potato Balls:
Shape the mixture into golf ball-sized balls and roll them in breadcrumbs to coat them evenly.

Bake:
Place the coated potato balls on the prepared baking sheet. Lightly spray them with olive oil to help them crisp up while baking.

Bake to Perfection:
Bake for 20-25 minutes, or until the potato balls are golden brown and crispy.
