This weekend’s pot of soup is Creamy Chicken Gnocchi….

Fresh parsley leaves ( dried if you don’t have fresh )
I use a mix of butter and olive oil to sauté the onion, celery, carrots and red pepper, about 2 tablespoons of each…. Sauté about 6 or 7 minutes then I add garlic and cook another minute or two, until you can smell the garlic
Add flour, I use about 2 tablespoons and cook another minute or two
Add chicken stock and potatoes, and all the spices to your liking, bring to a boil then simmer about half an hour
Add spinach and gnocchi and cook about 3 minutes
Add heavy cream
