Preheat your grill to high heat.
Season the T-bone steaks generously with salt and pepper on both sides.
Drizzle olive oil over the steaks and rub minced garlic onto each side.
Place the fresh rosemary and thyme sprigs on top of each steak.
Once the grill is hot, place the steaks on the grill and cook for 4-5 minutes on each side for medium-rare, or adjust cooking time according to your desired doneness.
During the last minute of cooking, add a tablespoon of butter on top of each steak and allow it to melt and baste the meat.
Remove the steaks from the grill and let them rest for a few minutes before serving.
