Pineapple Quick Bread

Bread:
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3 oz. cream cheese, softened
1 cup sugar
3 teaspoons vanilla extract
1 large egg, beaten
½ cup sour cream
1 (20 oz) can crushed pineapple, drained (save 2-3 tablespoons of the juice for the glaze)
Glaze:
1 ½ cups powdered sugar
2-3 tablespoons reserved pineapple juice

Preparation Method
Prepare the Oven and Pan:

Preheat your oven to 350°F (175°C) and grease a bread pan thoroughly with butter or non-stick spray.
Combine Dry Ingredients:

In a medium-sized bowl, whisk together the flour, baking soda, and salt. Set this mixture aside for later.
Mix the Wet Ingredients:

In a separate larger bowl, beat together the softened cream cheese, sugar, and vanilla extract until the mixture is smooth and creamy. Add the beaten egg and continue mixing until fully incorporated.
